Ahhhh my birthday weekend was laden with carbs and left me feeling pretty sluggish so let’s kick off this week strong with a recipe that always makes me feel good . Low carb fried “rice” . I do use peas and carrots in mine but if you can’t fit those into your macros you could use snap peas and water chestnuts. I start by putting my frozen chicken breast pieces in a pan with a little oil, liquid aminos or soy sauce if you prefer it and some seasoning . If you make Asian cuisine at all then I’m sure you’re used to putting a little ginger and garlic and some green onion in there . I put my bag of riced cauliflower in the microwave while I’m cooking my chicken. I add sugar free sweet chili sauce and teriyaki to my chicken because the sauce is going to be what flavors the whole rice dish. In a separate small skillet heat up a bit more oil and liquid aminos with some salt and pepper and then scramble a few eggs. Put your bag of peas and carrots in the micro to cook and when everything dings you’re ready to combine it all in your big skillet (the one your chicken and sauce are in) season a bit more to taste and voilà! So good and makes several servings ! Perfect for lunch tomorrow !
