I usually try to do a recipe blog post on fridays so that if you want to try something new over the weekend you’ve got some fresh ideas . 🤗 Today’s recipe is a little meatball sub with spaghetti and meatballs because if you’re gonna make meatballs and sauce why not have a couple different ways to serve it . As you amguys have probably realized by now , I like simple recipes so I hope you do too. You start with chicken Italian meatballs from the frozen section at target or whichever frozen meatballs that you like! Make sure you check the carb count before you buy them . Some prepared meatballs have a lot of fillers that you don’t want . The chicken meatballs I usually get are good and gather brand . I pour my no sugar added marinara in a pot with a can of Italian seasoned stewed tomatoes and if you’d like you can add mushrooms or zucchini or spinach ! Then pour your bag of meatballs in the pot and cover and heat on medium heat while you make your pasta . There’s lots of low carb or lower glycemic pasta and pasta substitutes out there . Use your favorite . I like palmini and dreamfields. Once your pasta has boiled and been drained pour it in with your sauce and meatballs and let it all simmer together a bit longer with some Parmesan cheese and salt and pepper to your liking . Then you get your keto hot dog bun and brush it with garlic butter then add a few meatballs and sauce all in a row like a little subway meatball sub and add Parmesan and mozzarella. I like to use the grilling cheese sticks from Aldi if I’ve got them on hand but if you don’t string cheese or shredded mozzarella or even sliced provolone will be great . Put your meatball sub in the air fryer for a few minutes on 400 degrees to toast it up and melt the cheese ! Yum!!
