I have a truly yummy dessert recipe for you today ! I intensely crave coconut cream pie! Especially when I was pregnant! It has always been one of my favorite treats . I’ve been experimenting with sugar free cool whip and instant pudding as you guys probably saw my banana crème mousse recipe some weeks back. This recipe is similar . You take a tub of sugar free cool whip , half a bag of unsweetened flaked coconut , a pack of sugar free instant pudding (you could use vanilla or cheesecake flavor , I think there is even a coconut flavored one but I never can find it at my store) so I just used a teaspoon of coconut extract and blended all of the ingredients in a bowl until we’ll combined and then put a lid on my bowl and refrigerated it . In an hour or so you can put a scoop of your mousse in a bowl with zero sugar reddi whip and toasted coconut on top . Toasting coconut is super easy . You just spread some unsweetened coconut flakes out on a pan and bake or air fry it at 325 for 5 minutes . I think you will find this dessert will more than fulfill your craving for coconut cream pie! If it fits in your macros you can even put your coconut mousse into a pie shell and top that with whipped cream and toasted coconut . It also freezes and thaws perfectly so you can have a slice a day ! Love to you all!
