Livin’ la vida low carb - His & Hers Breakfast burritos

Today’s recipe is one you can easily convert for your carb eating family members! Many of you probably have folks in your house like your kids or spouse who don’t do the low carb/keto thing. My poor hubby has wasted away to a mere wisp of a man since I committed to my lifestyle so I try to fill him up on carbs whenever I can so he can hopefully bulk back up while simultaneously trying to keep all the carbs out of my food ! So here’s an easy way to do that . You start with your breakfast meats of choice . Today I went with diced ham, chorizo and turkey bacon. I cooked the chorizo bin a pan first since it is the greasier of the meats and I like to get rid of that excess grease before I cook the other meats . So once my chorizo was cooked on medium heat for about 5 minutes I served it onto a paper plate and rinsed my pan out and dried it off . Then I cook my diced ham same way I cooks the chorizo medium heat for 5 minutes . Meanwhile I have my turkey bacon and low carb tots in the air fryer at 400 degrees. The turkey bacon only takes 5 minutes . The tots can stay in about 8 minutes . Chop up your turkey bacon once it’s out of the air fryer and toss it in the pan and put your chorizo back in there too with the diced ham. Add your eggs and some salt and pepper . Now I put some frozen diced potatoes in the air fryer on the setting for fries which is 400 degrees for 10 minutes and I scramble my eggs and meat . I sprinkle jack cheese over my egg and meat concoction and separate half of it for me and half for my husband . I add the potatoes to his and the low carb tots to my half and then heat regular tortillas on the burner for his, low carb tortillas for mine and then we make our respective burritos and enjoy !
