Thai pasta salad (jitters copycat lunch)

I used to work at a coffee shop called jitters when I was in high school. They had great food there! I used to have this amazing Thai style pasta salad with a turkey sandwich every day for lunch. Ever since then I have not been able to find anything like their Thai pasta salad so I’ve decided to make my own copycat of my favorite jitters lunch but without so many carbs. I made my turkey sandwich on extraordinary bites keto bread and the Thai pasta salad I used dreamfields spaghetti. You could also use palmini spaghetti instead of dreamfields or protein pasta if you want even less carbs. I boiled my spaghetti for 8 minutes to get it Al dente. I made my sauce for the pasta salad with chopped fresh green onions,chopped fresh cilantro,peanut sauce,Japanese mayo & Asian vinaigrette dressing. (I chopped up chicken that I had sautéed earlier in the week with green onion and chicken bouillon seasoning) and I added roasted red bell pepper slices, baby corn and Asian slaw mix. I combined all of my sauce,veggies,chicken and spaghetti in a large bowl and then put the whole pasta salad in the fridge to chill. This truly brought me back in time and definitely hit the spot!
